Why the Slicer Matters

Our Berkel flywheel slicer isn’t just for show. The manual blade stays cool, protecting the delicate fat and flavor in every meat. It gives us paper-thin prosciutto, precise cuts of salami, and a cleaner, truer taste than electric slicers can offer. Quality in, quality out.
Crafted at the Right Speed

Crafted at the Right Speed

Our Berkel flywheel slicer gives us total control, slow, cool cuts that protect texture and flavor. It lets us slice each meat the way it was meant to be served, from paper-thin prosciutto to fuller cuts of salami. It’s our way of respecting the quality farms and producers Chef Francis partners with.

Flavor Without Shortcuts

Flavor Without Shortcuts

Most boards are sliced fast on hot mechanical blades that dull flavor. Ours are sliced to order on a manual flywheel that keeps everything cool and precise. No friction, no compromise, no machine taste, just clean, honest flavor the way the producers intended.
Boards With Intention

Boards With Intention

We work with small farms and producers who focus on responsible practices and thoughtful craft. From Antico salami to Pennyroyal and Cowgirl Creamery cheeses, every item reflects relationships Chef Francis has built with people who care about what they raise and make.

Guest Feedback on Our To Go Boards

"Ordered delivery of a curated meat and cheese board. Thinking about ordering probably 4 of these for our family’s Thanksgiving celebration, which we call “pupus and pies.” Wanted to see how it was packaged to make sure it would survive an overnight stay since you are not open on Thanksgiving Day. Packaging was excellent, and the item will easily survive overnight. All very tasty and perfect for “pupus,” aka hors d’oeuvres."
